In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
Add the garlic, Cajun seasoning, smoked paprika, and thyme. Cook for 1 minute, until the spices are fragrant.
Add the diced sweet potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes.
Stir in the heavy cream and cook for an additional 5-7 minutes, until the soup is heated through.
Add the peeled and deveined shrimp to the pot and cook for 2-3 minutes, until they are pink and fully cooked.
